Whats a tourné knife?

tourné knife, also known as a paring knife, is a small, handy knife with a short, curved, or saber-shaped blade. The cutting edge, also called the "waist," is smooth, allowing for precise cuts. While it is ideal for peeling, it is also suitable for cleaning, hollowing, and decorating fruits and vegetables.

The name of this practical paring knife comes from the French word "tourner," which translates to "turn" and describes the knife’s basic function of peeling. For optimal handling, the blade should be approximately seven centimeters long.

The Blade

The tourné knife is forged from a single piece of stainless steel (steel material 1.4116) and is multiple ice-hardened. The finely polished blade surfaces and balanced rocking lines along the cutting edges ensure long-lasting sharpness and excellent cutting performance.

The Handle

The black, ergonomically designed plastic handle provides a secure and comfortable grip and is noted for its exceptionally attractive design and feel. The blade and handle are seamlessly and permanently connected.

What is a Tourné Knife Used For?

A tourné knife is ideal for peeling and cleaning fruits and vegetables. It is particularly effective for working with rounded shapes, such as apples, mangos, or potatoes. Peeling is easy and quick with this knife. Thanks to its slightly curved blade, the skin of fruits and vegetables can be removed almost effortlessly. Since the knife can be guided smoothly along the cutting edge and does not penetrate too deeply into the food, important vitamins located just beneath the skin are preserved.

How to Care for a Tourné Knife

To maintain the sharpness of the tourné knife, it is recommended to clean it by hand and not place it in the dishwasher. To avoid dulling the blade from contact with other utensils, the knife should be protected with a blade guard when stored in a cutlery drawer. Alternatively, a knife block or magnetic strip is ideal for storing the tourné knife. To ensure long-term sharpness and optimal cutting performance, the knife should be regularly sharpened. Das Tourniermesser habe ich schon länger. Letztlich ist es für mich ein häufig unterschätztes Messer, das ich nur selten in Haushalten finde. Darum wollte ich es zu Weihnachten Geneigten einfach schenken.
Wie der Name schon sagt, ist das Messer ursprünglich gedacht fürs Tournieren, also das Formen beispielsweise einer Karotte in ein Ei. Das mache ich auch mal, aber eher ausnahmsweise. Ich verwende das Messer für alles Schneiden, das ich in der Hand mache. Das ist so wunderbar handlich, deutlich besser als die Messer mit einer gerade Klinge statt dieser gebogenen. Sei es das Schälen von Obst, das Wegschneiden ungewünschter Stellen, das Schneiden von Kartoffeln, was auch immer. Es geht einfacher und damit auch schneller. Ungeeignet ist es großteils fürs Schneiden auf Brettern, aber dafür gibt es die gerade Klingen. Ausnahme sind Vanilleschoten, das funktioniert wunderbar. Das Tourniermesser ersetzt die geraden Klingen also nicht, es ergänzt sie.
Zur Qualität der Messer kann ich nur schreiben: Ich war mit recht guten Messern bereits ausgestattet als ich Tyrolit kennenlernte. Kurzum, die Qualität meines ersten Tyrolit-Messers hat mich wirklich überzeugt. Neu ist selbst das billigste Messer scharf, das ist keine Kunst. Entscheidend ist, wie sich das Messer langfristig mit welchem Aufwand schärfen lässt und wie lange es scharf bleibt. Hier ist Tyrolit einfach sehr gut.
Erwähnen möchte ich noch den Kundenkontakt. Dieser ist auf eine Weise professionell, wie ich das tatsächlich bei noch keiner anderen Firma erlebt habe.
