Grilled Ostrich Egg Scramble with Green Asparagus
Zubereitung:
Chop all the ingredients into small pieces. For this, I prefer using the Fly Wheel Cut M from the Darkline knife series.
In the meantime, preheat the grill.
Place a pot on the grill and add the oil. Once it’s hot, add the veggies and sauté them. Then, use the backside of a knife to crack the egg approximately in the middle with three hits. Be careful: the shell is very tough!
Next, pour the entire egg into the pan and gently stir with a spoon until it reaches a creamy consistency. It’s best to serve it immediately.
Fresh country bread is the perfect accompaniment.
Tip: Taste it before adding salt. Ostrich egg simply has a different flavor. For those who prefer a spicy kick, add some finely chopped fresh chili.

3 tbsp table oil
Salt, ground black pepper to taste
