Carrot Orange Soup
Zubereitung:
Peel carrots and celery and cut them into approximately 2×2 cm pieces with a sharp knife.
Peel and finely chop the ginger. Finely dice the onion and sauté in oil until translucent. Add ginger, carrots, and celery and continue to sauté for 2-3 minutes.
Deglaze with vegetable broth and add coconut milk. Season with curry powder, salt, and pepper, cover, and simmer for about 20 minutes.
Meanwhile, preheat the oven to 200 degrees Celsius with fan assistance. Place bacon strips on a baking sheet lined with parchment paper and bake until crispy, about 8-10 minutes.
Add a tablespoon of butter and blend until smooth.
Just before serving, stir in the zest of half an organic orange into the soup and bring to a boil again briefly.
Crumble the bacon with your fingers and garnish the soup with bacon chips at the table.

40g ginger, peeled
½ tsp curry powder
Zest of half an organic orange
2 tbsp neutral oil
1 tbsp butter
500ml vegetable broth
250ml coconut milk
Salt
Pepper
Bacon chips:
4 slices of finely cut bacon
1 sheet of baking paper
