Pizza stone and baking paper: Actually, they are mutually exclusive. Either the pizza is baked on the baking tray – but then with baking paper in between. Or you are the proud owner of a pizza stone and can bake wonderfully crispy pizza without baking paper.

But does this rule apply without exception?

Parchment paper on the pizza stone – an option?

Basically, no parchment paper is required for the correct use of a pizza stone. A hot pizza stone effectively prevents dough and ingredients from sticking during baking. In addition, there is an exchange of moisture between stone and baked goods, which would be hindered by baking paper.

Especially at high temperatures, you should avoid baking paper on the pizza stone. It can potentially discolour or even burn, leading to unwanted flavours and odours.

Instead, it is recommended to preheat the pizza stone thoroughly before use to achieve optimal results and prevent the dough from sticking. Sufficient preheating and the use of coarse flour on the surface render baking paper unnecessary.

Pizza Stone – All Facts on Materials, Application, and Maintenance

Put pizza on the pizza stone with parchment paper

However, pizza stone and baking paper are not completely mutually exclusive. Especially if you don’t have a pizza peel on hand, you can use a cutting board covered with baking paper to get the pizza onto the pizza stone.

It is important not to bake the baking paper, but to pull it out under the pizza or let it slide down. A little flour or semolina will prevent the pizza from sticking to the baking paper.

Properly heating the pizza stone – Better than using parchment paper

Before you bake your pizza, you need to preheat your pizza stone. This ensures even heat transfer and a crispy crust without the dough sticking.

The Tyrolit Life pizza stone, made of cordierite, is especially efficient due to its waffle structure, which aids in heat absorption. It is advised to preheat the pizza stone for at least 30 minutes at a temperature of around 230°C in the oven, or approximately 300°C on the grill. After preheating, the stone is ready to bake the pizza with optimal heat and produce a delightful baking outcome.
