Sharpening knives correctly – Combination sharpening stone with two grits

The Application – Sharpening Knives on the whetstone

For an optimal sharpening result, draw the blade over the respective grindstone or sharpening stone at a 15° angle. Ensure the blade is evenly placed and exert only light pressure. The sharpening stone set features two different grits.

Sharpening Stone Grit – For the initial rough sharpening or primary grind, draw the knife across the coarse, darker sharpening stone with a 400 grit. For the fine sharpening, pull the blade over the finer, lighter ceramic stone with an 800 grit. The frequency of the sharpening motion depends on the desired sharpness of the blade. Japanese knives can also be sharpened with the stone; it’s just important to know the sharpening angle of your knife.

How do you maintain the sharpening stone – combination stone?

For cleaning and maintaining the sharpening property of the stone, we recommend using the included abrasive fleece or the Tyfix abrasive cleaner. Run the abrasive fleece over the sharpening stone under lightly flowing water with circular motions until the surface feels slightly rough again and looks uniformly even.

This process results in grinding sludge that cleanses the segment of the sharpening stone and washes away the increasingly rounded abrasive grain. By uncovering the underlying abrasive grain, the stone’s sharpening ability is restored.
